Vegan Chocolate Cake

- 2 Cups All-Purpose Flour
- 1½ Cups Granulated Sugar
- ¾ Cup Cocoa Powder (unsweetened)
- 1½ tsp. Baking Powder
- 1½ tsp. Baking Soda
- ½ tsp. Salt
- 1½ Cups Unsweetened Almond Milk (or any plant-based milk)
- ½ Cup Applesauce
- ⅓ Cup Vegetable Oil
- 2 tsp. Vanilla Extract
- 1 Cup Water (boiling)
- 1 Cup Plant-Based Butter
- 3½ Cups Powdered Sugar
- ½ Cup Cocoa Powder (unsweetened)
- 1 tsp. Vanilla Extract
- ¼ Cup Unsweetened Almond Milk (or any plant-based milk)
- Preheat your oven to 350°F (175°C).
- Grease two 8-inch round cake pans and line the bottoms with parchment paper.
- In a large mixing bowl, whisk together dry ingredients.2 Cups All-Purpose Flour, 1½ Cups Granulated Sugar, ¾ Cup Cocoa Powder, 1½ tsp. Baking Powder, 1½ tsp. Baking Soda, ½ tsp. Salt
- Add wet ingredients.1½ Cups Unsweetened Almond Milk, ½ Cup Applesauce, ⅓ Cup Vegetable Oil, 2 tsp. Vanilla Extract
- Mix until well combined.
- Gradually pour in the boiling water while stirring. The batter will be thin.
- Divide the batter evenly between the prepared cake pans.
- Bake in the preheated oven for about 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, transfer to a wire rack to cool completely.
- While the cakes cool, prepare the chocolate frosting. In a mixing bowl, beat softened vegan butter until creamy.
- Gradually add powdered ingredients while continuing to beat.3½ Cups Powdered Sugar, ½ Cup Cocoa Powder
- Stir in wet ingredients until you achieve a smooth and spreadable consistency.1 tsp. Vanilla Extract, ¼ Cup Unsweetened Almond Milk
- Once the cakes are completely cooled, frost the top of one cake layer. Place the second cake layer on top and frost the entire cake with the remaining chocolate frosting.
