  • 2 Sweet Potatoes (peeled and cubed)
  • 2 Tbsp. Olive Oil
  • 1 Onion (diced)
  • 3 Cloves Garlic (minced)
  • 1 Red Bell Pepper (diced)
  • 15 oz. Black Beans (1 can, drained and rinsed)
  • 28 oz. Diced Tomatoes (canned)
  • 2 Cups Vegetable Broth
  • 1 Tbsp. Chili Powder
  • 1 tsp. Smoked Paprika
  • 1 tsp. Cumin
  • 1 tsp. Salt
  • 2 Sprigs Fresh Cilantro

Instructions
 

  • Heat the olive oil in a large pot over medium heat.
  • Add the diced onions and minced garlic, cooking until the onions become translucent.

  • Stir in the diced red bell pepper and cook for an additional 3 minutes until slightly softened.

  • Add the cubed sweet potatoes to the pot along with the black beans, diced tomatoes, and vegetable broth.
    2 Sweet Potatoes, 15 oz. Black Beans, 28 oz. Diced Tomatoes, 2 Cups Vegetable Broth
  • Season the mixture with smoked paprika, cumin, chili powder, and salt. Stir well to combine.
    1 Tbsp. Chili Powder, 1 tsp. Smoked Paprika, 1 tsp. Cumin, 1 tsp. Salt
  • Bring the chili to a boil.
  • Reduce the heat and let it simmer for about 30 minutes, or until the sweet potatoes are tender and the chili has thickened.
  • Taste and adjust the seasoning if necessary.
  • Serve hot, garnished with fresh cilantro.
