  • 3 Cloves Garlic (minced)
  • 1 Red Bell Pepper (diced)
  • 2 Carrots (diced)

  • 4 Cups Vegetable Broth
  • 14 oz. Fire-Roasted Tomatoes
  • 14 oz. Black Beans (drained and rinsed)
  • 1 Cup Corn Kernels (fresh or frozen)
  • 1 tsp. Salt
  • 2 tsp. Black Pepper
  • 1 Avocado (sliced for garnish)
  • 3 Sprigs Fresh Cilantro (for garnish)
  • 2 Limes (cut into wedges for serving)
  • 1 bag Tortilla Strips (for garnish)

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add diced onions and garlic, sautéing until translucent.
  • Add the diced red bell pepper and carrots to the pot.
  • Cook for a few minutes until softened.
  • Stir in ground cumin and paprika, cooking for an additional minute to release their aromas.
  • Pour in the vegetable broth and add the can of fire-roasted tomatoes.
  • Bring the mixture to a boil.
  • Reduce heat, add black beans and corn.
  • Simmer for 20 minutes, allowing the flavors to meld together.
  • Season the soup with salt and pepper to taste.
  • Serve the soup in bowls, topped with avocado slices, fresh cilantro, and tortilla strips. Squeeze lime wedges over each serving for added zest.
