- 1 Cup Arborio Rice
- 2 Tbsp. Olive Oil
- 1 Onion (finely chopped)
- 2 Cloves Garlic (minced)
- 4 Cups Vegetable Stock
- 1 lb. Fresh Mushrooms (we love shiitake or oyster!)
- 1 Cup Dry White Wine (optional)
- 1 ½ tsp. Thyme (fresh if possible)
- ½ tsp. Black Pepper
- ¼ tsp. Sea Salt
- 2 Tbsp. Nutritional Yeast
- In a large saucepan, heat the olive oil over medium heat.
- Add the onion and garlic, sauté until the onion becomes translucent.
- Add the mushrooms to the pan and cook until they have released their juices and are browned.
- Season with thyme, salt, and pepper.
- Add the Arborio rice to the pan and stir well, ensuring each grain is coated with oil. This helps to give the risotto its characteristic creaminess.
