Vegan White Bean Chili

- 2 Tbsp. Olive Oil
- 1 Onion (diced)
- 1 Red Bell Pepper (diced)
- 1 Jalapeño (seeded and minced)
- 3 Cloves Garlic (minced)
- 1½ tsp. Ground Cumin
- ½ tsp. Smoked Paprika
- 1 tsp. Dried Oregano
- 4 Cups Vegetable Broth
- 15 oz. White Beans (2 cans, drained and rinsed)
- 4 oz. Green Chilies (1 can, diced)
- 2 Cups Corn (frozen)
- ½ tsp. Salt
- ¼ tsp. Black Pepper
- ¼ Cup Fresh Cilantro (chopped)
- In a large pot or Dutch oven, heat the olive oil over medium heat.
- Add the diced onion, red bell pepper, and jalapeño.
- Sauté for 5-7 minutes, or until the vegetables are softened.
- Add the minced garlic, ground cumin, smoked paprika, and dried oregano.
- Cook for 1-2 minutes, stirring constantly, until fragrant.
- Stir in the vegetable broth, white beans, diced green chilies, frozen corn, salt, and black pepper.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 30-40 minutes, stirring occasionally.
- Once the chili has thickened, remove it from the heat and stir in the chopped fresh cilantro.
