  • Dutch Oven
  • 2 Tbsp. Olive Oil
  • 1 Onion ((diced))
  • 1 Red Bell Pepper ((diced))
  • 1 Jalapeño ((seeded and minced))
  • 3 Cloves Garlic ((minced))
  • 1½ tsp. Ground Cumin
  • ½ tsp. Smoked Paprika
  • 1 tsp. Dried Oregano
  • 4 Cups Vegetable Broth
  • 15 oz. White Beans ((2 cans, drained and rinsed))
  • 4 oz. Green Chilies ((1 can, diced))
  • 2 Cups Corn ((frozen))
  • ½ tsp. Salt
  • ¼ tsp. Black Pepper
  • ¼ Cup Fresh Cilantro ((chopped))
  1. In a large pot or Dutch oven, heat the olive oil over medium heat.

  2. Add the diced onion, red bell pepper, and jalapeño.

  3. Sauté for 5-7 minutes, or until the vegetables are softened.

  4. Add the minced garlic, ground cumin, smoked paprika, and dried oregano.

  5. Cook for 1-2 minutes, stirring constantly, until fragrant.

  6. Stir in the vegetable broth, white beans, diced green chilies, frozen corn, salt, and black pepper.

  7. Bring the mixture to a boil, then reduce the heat and let it simmer for 30-40 minutes, stirring occasionally.

  8. Once the chili has thickened, remove it from the heat and stir in the chopped fresh cilantro.
